cowboy caviar

Fall means tailgating season and lots of delicious dips, desserts and snacks to munch on during the games. I often like to try and have at least one healthy appetizer at the tailgates to make me feel like consuming all the sweets/unhealthy foods isn't so bad (anyone else?). This past weekend for the Alabama/LSU game I decided to try Cowboy Caviar to bring to the viewing party.

The recipe was simple to pull together and could be easily customizable to your taste. I added garlic and cumin this round and plan on adding a jalapeno next time for an added kick.
I loved the way all of the fresh ingredients and dressing came together for a light and refreshing party snack. Tip: have at least 30-45 minutes to let the dip sit together in the fridge- it only gets better from there...

Any tailgating appetizers that you can't get enough of?
I'd love to hear your recipes!

  2. Yum, my parents make this dip all the time and I love it! I'm pretty much a fan of any dip / tailgating app, but pigs in a blanket and sausage balls are perfection in my book. :)

  11. YUM! I love cowboy caviar at tailgates -- it's practically a religion here at Notre Dame... People are regularly grilling filets and boiling lobsters at tailgates; it's amazing.
