Tuesday Eats

oh.my.delicious

This is without a doubt my new favorite side dish. It's incredibly simple to make and it only gets better with time. We served this as a side to grilled chicken, but it could also easily be a light lunch. I usually pick up the couscous from Trader Joe's but it's easy to find in any grocery store. (see another favorite couscous recipe here)

Lemon Asparagus Couscous Salad with Tomato
via skinnytaste

ingredients:
6 oz whole wheat pearl couscous
3/4 lb. thin asparagus spears, tough ends trimmed
1 1/2 c. grape tomatoes, quartered
1/4 c. red onion
1-1/2 lemons, juiced
1 tbsp. extra virgin olive oil
2 tbsp. fresh parsley, minced
kosher salt and pepper, to taste

directions:
Bring a large pot of salted water to boil, add asparagus and cook until tender, about 3 minutes.
Remove asparagus and rinse in a colander in the sink under cold water to stop it from cooking. Add the couscous to the boiling water and cook according to package directions.
Chop the red onion into small 1/2 inch pieces. Drain the couscous and rinse under cold water. Place in a large bowl.
Add the chopped asparagus, tomatoes, red onion, lemon juice, olive oil, parsley, salt & pepper to the bowl.

Serve at room temperature or chilled.

xx
