Healthy Peanut Butter Balls


While I try and eat healthy on a regular basis, sweet treats are something that always seem to find a way into my week. Combine healthy foods + natural sweetener and BAM, you have a guilt-free way to take care of your craving. These peanut butter balls were made in my trusty Ninja blender and have since become a snack favorite. They're perfect after a meal, a workout or even when the 3pm slump hits. Each ball is packed with health benefits and tons of flavor.

Peanut Butter Balls

ingredients:
1/2 c. walnuts
1/2 c. chopped, pitted dates
1/2 c. almonds
1/2 c. pure maple syrup
1/4-1/2 c. almond butter (or peanut butter)
1/2 c. finely shredded coconut
3/4 c. oats
2-3 tbsp. chocolate chips (or carob chips)
1 tsp. vanilla

directions:
Using a food processor (or blender) blend walnuts until chunky crumbs. Then add dates and process again until chunky crumbs. Next add almonds and chocolate chips ( you want it to be slightly chunky). Next, add maple syrup, almond butter and vanilla. Process until combined. Then add coconut and oats. Process until chunky & combined. 

Roll into balls. It will be sticky!
Roll them out plain or in additional shredded coconut

Store in fridge or freezer.
