Morning Fuel




My typically mornings breakfast consists of either overnight oats or greek yogurt with a variety of fresh fruit and granola, served with a cup of coffee. On the weekends I like to mix it up and have eggs or pancakes so I don't overdo the yogurt. These however, will be making a regular appearance in my breakfast rotation.

This recipe for greek yogurt pancakes combines two breakfast items that I love. Side note- these pancakes take a little bit longer to cook.... We tried to cook them on med-high the first time and ended up with a few severely burned flapjacks. Low-medium heat (and some patience on my behalf ) is the way to go for these.

Greek Yogurt Pancakes

ingredients:
 8 oz. greek yogurt (we used Vanilla- SO good!)
7 tbsp all-purpose flour 
1 tbsp. sugar
1 tsp. baking soda
1/2 tsp. salt
2 large eggs
1/2 tsp. vanilla extract

directions:
Place Greek yogurt in a medium bowl. Add flour, sugar, baking soda and salt. Stir together very gently until just combined.
Whisk eggs in a separate bowl. Add vanilla to eggs and stir to combine. Pour egg mixture into the Greek yogurt-flour mixture. Stir together gently. 
Pour the batter onto a pan sprayed with cooking spray, ¼ cup at a time. Cook for 1 to 1 1/2 minutes, then flip the pancakes. Cook for another 45 seconds and remove to plate. Repeat with the remaining batter. 
Top with syrup and/or fresh fruit and enjoy!

  3. Yum! I stick to yogurt and granola through the week to, so when the weekend rolls around I am ready to treat myself. Definitely going to give these a try!
