Buffalo Wing Makeover

During a recent beach trip with some of my best friends, we had these amazing buffalo balls with dinner one night. They're so simple to make and a much butter alternative to regular buffalo wings.  These are seriously delicious, please trust me and make them this weekend for whatever sports team you're rooting for.

They're a great tailgating snack and are sure to win over even the manliest of guys that love buffalo wings. The recipe offers the option of using ground chicken or ground turkey, but I personally am a fan of the ground chicken for this dish.

When I make these they never turn out this pretty. They're more buffalo lumps if you will.
So for this recipe, I'll just take the easy route and share the original picture.


Buffalo Balls

ingredients:
1 lb. ground chicken or turkey
2 oz. cream cheese, softened
2 eggs
2 tbsp. chopped celery
3 tbsp. crumbled blue cheese
1/2 tsp. black pepper

sauce:
1/2 stick unsalted butter
1/2 c. Frank's Red Hot

Directions:
Combine all of the meat ingredients in a large bowl. Do not add salt. The mixture will be sticky and gooey-- that's ok!
Form into 1 inch balls. Think of an appetizer sized ball as a reference. Place on a greased cookie sheet and bake at 350 degrees for 10 minutes.

While those are baking, begin to make the sauce. Combine the butter and frank's sauce in a small saucepan on medium heat. Or use a microwave and heat for 2 minutes. 

After 10 minutes, remove the balls from the oven and carefully coat with the sauce. Place back on the cookie sheet and bake for an additional 12 minutes. If you have additional sauce pour it over the balls and bake for 3-4 more minutes. 

Serve with ranch dressing and celery sticks and enjoy!

  2. Yum! Stephen like buffalo anything so I dont think he would have a problem eating these. May not be able to wait for the weekend!

  5. Yum! I'm a sucker for anything spicy but I don't actually love the wing part of buffalo wings... Brilliant solution.
