One of my favorite cooler weather meals (and honestly any time of year) meals is chicken and dumplings. To me it's one of the best comfort foods-- up there with macaroni and cheese :)
What's better than comfort food? Comfort food that's effortless to make, tastes great and can be cooked in a crockpot.
This is now one of my favorite recipes for this dish and is always a crowd pleaser. It doesn't make a large serving, so if you're feeding a crowd I'd suggest doubling. I like a lot of dumplings in mine which is why the picture above is crowded with that deliciousness. If you prefer a thinner chicken and dumplings you might want to add more broth than the menu requires.
Crock Pot Chicken and Dumplings
recipe via bubble crumb
ingredients:
4-6 boneless chicken breasts (I typically use 3 medium sized ones)
2 tbsp. butter
2 cans cream of chicken soup (want to try this substitute next time)
1 can chicken broth
1 onion diced
1 tbsp. dried parsley
4 grands refrigerator biscuits
directions:
Place the chicken in the crockpot and place the butter on top.
Next, add the cream of chicken soups,chicken broth, diced onion and dried parsley.
Cook on high for 4-6 hours.
When time is finished use a fork to break up the chicken into pieces.
Then, cut biscuits into 9 pieces.
Add that to the crock pot mixture and continue to cook for 30 minutes.
(Add more chicken broth as desired)
