Corn and Avocado Salad


Ok, so the picture just doesn't do this justice, but I promise that this super simple, super delicious side dish could potentially become a summer staple of yours. If you're not a fan of corn, avocado or cilantro (or basil) then probably not.... but if you arrrreeeee step right up and write these ingredients down.

This will take you all of 15 minutes to whip up and you're set to go. I stuck mine in the fridge ahead of time to let the flavors really marinate together and get it a little bit colder to serve. Have this paired with some grilled chicken (like we did) or fish and your easy meal is done.

Corn and Avocado Salad

ingredients:
3 ears of fresh corn, husked and cut from the cob
1/2 c. red onion, diced
1 avocado
1 tbsp olive oil
juice of 1/2 lime
1 tbsp. fresh cilantro or basil, chopped
1/2 tsp. sea salt
freshly ground pepper, to taste

directions:
Husk and cut the corn from the cob
Combine all ingredients together in a bowl
Serve immediately or allow to sit
