Watermelon Salsa


This watermelon salsa is the perfect way to take advantage of the abundance of watermelon in the grocery stores. It's simple to make and packs a punch of flavor. It's a clean, fresh appetizer that guests will love or is perfect to whip up one evening after work.

We even whipped up a batch of homemade tortilla chips to serve with it. They take no time at all to make and can save you a trip to the grocery store (for when you look in the pantry and find stale chips, which consistently happens to me)

Watermelon Salsa

ingredients:
3 c. seeded and chopped watermelon
1/2 c. yellow/red peppers
2 tbsp. lime juice
2 tbsp. chopped cilantro
1 tbsp. chopped green onion
1 tbsp. jalapeno pepper chopped (optional)

Combine all ingredients and chill at least one hour.

easy is an understatement for this!
If you can chop food, you can make this appetizer.

Healthy Tortilla Chips

ingredients:
whole wheat tortillas
olive oil
sea salt

directions:
Brush one side of the tortilla with olive oil. Next, sprinkle sea salt on top.
Cut into wedges (we stacked about 3 on top and cut wedges then).
Place on baking sheet sprayed with pam.
Bake at 350 degrees for 8-10 mins, or until crisp.
